CHICKPEA SALAD SANDWICHES

INGREDIENTS

  • Chickpeas (canned)
  • Vegan mayonnaise
  • Dijon mustard
  • Capers
  • Seasoning
  • Chopped onions
  • Chopped celery
  • Lettuce
  • Bread slice or wraps

METHOD

If you’re trying to be vegan and miss the taste of chicken and tuna salad sandwiches don’t worry you can enjoy the same flavour with chickpeas instead. It’s so tasty and really healthy. The great thing about a salad sandwich you don’t have to used fixed proportions. You can just keep adding the ingredients to adjust for your palate. Drain the chickpeas and crush them along with vegan mayonnaise, dijon mustard, capers, and seasoning of choice. If you have a food processor you can use that until the mixture is mashed but still has texture. Add celery and onions for texture and taste. Apply the mixture to the bread and wraps.

TOFU SALAD SANDWICH

INGREDIENTS

  • 1/2 block firm or extra-firm tofu
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon capers
  • Seasoning
  • Rib celery, chopped
  • Red pepper, chopped
  • Red onion, chopped
  • 4 slices bread or toast

METHOD

The great thing about salad sandwiches are that you don’t have to used fixed proportions or a strict recipe. If you miss egg salad this is a great substitute, it’s tasty and creamy. Blend tofu, mayonnaise, mustard and seasoning make sure to crush the tofu. Add chopped celery , onions and red peppers to the mixture both for flavour and texture. Spread the tofu salad mixture on bread.

CRISPY CAULIFLOWER SANDWICH

INGREDIENTS

  • Cauliflower
  • Olive oil
  • Baby spinach
  • Garlic cloves
  • 4 ciabatta rolls (or similar good, crusty bread)
  • Barbecue or Romesco sauce
  • Almonds
  • 1 cup roasted red peppers, drained if jarred
  • 1 tbsp. red wine vinegar
  • 1/2 tsp. smoked paprika
  • 1 garlic clove, roughly chopped
  • 2 tbsp. olive oil

METHOD

Cut the cauliflower head from the stem into small steak snippets. Add oil to a pan on a medium heat. Make sure the oil is hot enough before you add the steak snippets. Let the cauliflower steaks turn golden brown. Once golden brown add garlic, spinach and the appropriate seasoning and let it wilt. Toast the bread on the frying pan. Assemble the sandwich by applying the sauce of choice to both sides. Stack with your cauliflowers and greens and enjoy.

VEGAN BLT SANDWICH

INGREDIENTS

  • Sliced vegan bread
  • Vegan bacon ( coconut or eggplant bacon work best)
  • Vegan mayonnaise or hummus
  • Red or white onion 
  • Medium ripe tomato (thinly sliced)
  • 2 leaves green lettuce

METHOD

Toast your bread over a medium high heat skillet. Add the bacon on the hot skillet for 1-2 minutes then turn it over and cook for 2 minutes on the other side. Remove from the heat and set aside. Add the mayonnaise or hummus on both sides of the bread. top one piece with Eggplant or Coconut Bacon, onion, tomato, and lettuce. Top with other piece of bread.

VEGAN MEATBALL SANDWICH

INGREDIENTS

  • 4 buns, toasted 
  • Vegan meatballs
  • 2–3 cups marinara sauce, warmed 
  • Vegan cheese ( Parmesan preferably)

Cook the vegan meatballs throughout using the cooking instructions. If you can’t find any vegan meatballs don’t worry we’ll leave a link for a recipe here. To serve, split the buns and add a layer of warmed sauce. Add the meatballs and cover with more sauce. Top with parmesan cheese and enjoy your sandwich.
